- 1/4 cup Butter
- 1/4 cup All-Purpose Flour
- 1 can Evaporated Milk
- 1/4 cup Onion chopped
- 2 cups Chicken Broth
- 2-3 medium Potatoes baked

Instructions
- Melt butter in a pan.
- Add onion and cook 2 minutes, stirring occasionally.
- Stir in flour.
- Gradually add broth and evaporated milk.
- Mash potatoes to a pulp.
- Save the skins.
- Add potatoes to the broth and cook over medium heat until it boils.
- Dice potato skins and stir them in.
- Heat mixture.
- Spoon into bowls and sprinkle with toppings.
