Ingredients
- 4 Chicken Breasts boneless cut into 1-inch pieces
- 1/2 cup Basil Pesto
- 1/2 cup Mozzarella Cheese
- Salt and Pepper to taste

Instructions
- Preheat oven to 375 degrees.
- Spread 1⁄4 cup pesto in greased 9x13 pan to cover the bottom of the dish.
- Spread the chicken over the pesto, then top with the remaining pesto over the chicken.
- Cover the dish with aluminum foil and bake for 25-30 minutes, until the chicken is cooked.
- Remove the foil and sprinkle the cheese on top of the chicken.
- Leave uncovered and cook an additional 5 minutes. To brown the cheese, you can broil the dish for another 2-3 minutes more.
- Serve with rice, potatoes or quinoa.
