Pesto Chicken

Chicken Breasts
boneless cut into 1-inch pieces

cup
Basil Pesto
1/2
cup
Mozzarella Cheese
Salt and Pepper
to taste
Instructions
Preheat oven to 375 degrees.
Spread 1⁄4 cup pesto in greased 9×13 pan to cover the bottom of the dish.
Spread the chicken over the pesto, then top with the remaining pesto over the chicken.
Cover the dish with aluminum foil and bake for 25-30 minutes, until the chicken is cooked.
Remove the foil and sprinkle the cheese on top of the chicken.
Leave uncovered and cook an additional 5 minutes. To brown the cheese, you can broil the dish for another 2-3 minutes more.
Serve with rice, potatoes or quinoa.
